Meet the Captain
Get ready to meet our captain Jimmy Phan, the heart and soul of Fresh off the Boat Charters!
Jimmy holds a United States Coast Guard Master Captain’s License, Texas Parks and Wildlife All-Water Fishing Guide license, and is certified in United State Guard-specific First Aid, CPR, and AED.
Captain Jimmy is all about fun, drive, and working hard to ensure you reel in the biggest catch of the day. Our crew specializes in creating an electrifying atmosphere full of fish-catching excitement, making our boat the perfect place to entertain family, friends, and business clients.
Jimmy has been dominating saltwater fishing for the past 10 years and thrives on the challenge of outdoing each previous trip. He spends as many days as possible on the water, honing his skills and discovering new fishing hotspots. His favorite targets? Warsaw Grouper and Swordfish, but he loves seeing customers hook up with Red Snapper and any other fish that bites!
Based in Matagorda for its abundant fish population during both summer and winter seasons, Jimmy is not just a fishing expert—he's also a social media sensation! With a large following on TikTok and viral videos showcasing his passion, Jimmy’s love for fishing shines through. He’s also reactivated his YouTube channel to give fans a deeper look at his fishing adventures.
For the past 7 years, Jimmy has embraced the thrill of jet ski fishing, reveling in the excitement of solo fishing expeditions and the unique catches they bring. Our State Water Snapper Boat
This is our 2005 Triumph 210 CC, powered by a 2005 Honda 150hp 4-stroke engine. Equipped with a Minn Kota trolling motor, it’s perfectly set up for targeting State Water fishing.
This boat is dedicated exclusively to state water red snapper fishing.

This is a top-of-the-line safety device designed for emergency situations. In the event of an emergency, the EPIRB V6 sends an immediate distress signal with your exact location to search and rescue teams, ensuring fast response times.
We have a 6-man life raft on board, designed to ensure protection in case of an emergency. This life raft is equipped to accommodate up to six people and comes with essential survival gear, including a first aid kit and signaling equipment.
We have Type 1 Coast Guard-approved life jackets on board for all passengers (adults & children). These life jackets are designed for offshore and rough waters, providing the highest level of flotation.
